The Williams’ Block 2018 Cabernet Sauvignon
Carefully selected parcels of cabernet sauvignon are brought together to produce this intensely concentrated wine. Brooding varietal characters of dark berry fruits and herbal notes, integrated french oak and a natural acidity are balanced by firm tannins.

Each variety was harvest separately at optimum ripeness and transported directly to the winery. The fruit was de-stemmed, crushed and transferred to open fermenters which were plunged twice daily. Once the wine had reached the optimum time on skins it was pressed off. Post fermentation the wine was transferred oak for maturation. After 20 months maturation the wine was blended, filtered and bottled.
The 2018 vintage will go down as a classic, great all-round year. Flowering and fruit set were also exceptional giving solid yields across WA. Some significant rain events in December set up the vineyard with good levels of ground water to see them through ripening. A relatively cool summer has allowed for slow, steady ripening of whites, retaining high levels of natural acidity. The moderate temperatures continued allowing for optimum ripening conditions for reds resulting in wines with elegance, structure and flavour.
