The Williams’ Block 2019 Cabernet Sauvignon
Deep Dark red with a scarlet hue. Rich and inviting aromatics of berry fruit, bay leaf and toasty oak. The palate has a lot going on, a ripe fruit profile filled with plum and forest fruits surrounded by fine French oak plushness, cardamon and cinnamon spice notes along with dried herbal notes. Firm structural tannins frame the wine, and the natural acidity adds freshness and drives the wine through to a long, tight finish.

The fruit was harvested at optimum flavour, tannin and phenological ripeness, and transported directly to the winery. The fruit was destemmed, gently crushed, and transferred to fermenters – a combination of open and static. The fermenters were monitored and plunged or pumped over once or twice daily dependant on the stage of fermentation. The temperature was maintained below 28ºC. Once the optimum time on skins was reached for each batch it was pressed off and transferred to a combination of new and seasoned French oak barriques for maturation. After 14 months maturation individual barrels were selected to be blended, filtered and bottled.
Vintage 2019 was a long, cool vintage. It started off with a cooler than average spring and summer and this followed through vintage. Canopy management and attention to detail were key to getting fruit ripe and avoiding disease. Yields were low across the board. The results have been punchy aromatic whites, fine natural acidity, spicy Shiraz and more elegant Cabernets.
